At this point she figured she must be over 50% animal. Heart grown in a pig. Replacement pancreas started in a rat. Both lungs cultivated in a rhesus macaque. Mouse-developed corneas. Liver grown in a sheep that had no doubt fought the good fight. Chimpanzees’ joints. Peptide C clotting enzyme from horseshoe crab blood. Eardrums from a university lab’s bonobos. Recently, the sight of cooked meat made her feel nauseous. Do we really put what was now inside her…inside us? But also, how delicious (if marinated in citrus, then sautéed in sea salt and butter) would her pig heart taste.
